Mikra'ot Gedolot HaKeter (Bar-Ilan University)
This Hebrew language site provides the ability to read the Hebrew Bible in a number of ways, such as with or without verse numbers, with or without vowels, and even on a scroll without verse dividers, Prophets and Writings included. The text is based on the Aleppo Codex. The site also has the best scholarly editions of the most important Jewish medieval commentators such as Rashi, Ibn Ezra, Rashbam, and Nahmanides.

This site has a number Rabbinic commentaries for every single biblical verse (מקראות גדולות). Some even have public domain translations.

Bar-Ilan Responsa Project
This database has thousands of Rabbinic text in Hebrew/Aramaic and powerful search capabilities. Unfortunately, it is currently only accessible for a fee or with university library access.

Jastrow's Aramaic Dictionary
More than a century old, this dictionary is still a great resource. Tyndale has the text in an easy to use format. Also available for download at archive.org (2 volumes) or as part of the Comprehensive Aramaic Lexicon.
